next stop will be at Ruca Malen winery

**RUCA MALEN FIVE-STEP MENU**
FIRST STEP
Wine: YAUQUÉN Chardonnay-Semillón 2006. 70 %
Chardonnay, 30% Semillón. The youngest wine the winery
produces. Fruity and fresh wine, with no oak aging.
Easy to drink.
Course: Bruschetta with thin slices of eggplant,
ricotta cheese and lemon zest.
Pairing: Highlights the freshness of this wine with
the acidity from the ricotta and the citric flavors.
SECOND STEP
Wine: YAUQUÉN Malbec - Cabernet Sauvignon 2006. Blend
50% each grape. Also belongs to the youngest line the
winery produces. 50% of the wine was in contact with
oak. Red wine with violet-like hues. Complex nose and
a soft and light mouth and with strong fruity notes.
Course: Roasted pumpkin soup with rosemary and sun dry
tomatoes.
Pairing: The species harmonizes with the cabernet
sauvignon while the sun dried tomatoes allow the
malbec to be highlighted.
THIRD STEP
Wine: RUCA MALEN Malbec 2004. 85 % Malbec, 10%
Cabernet Sauvignon, 5% Merlot. From the middle
commercial line of the winery. 12 months aging in oak
barrels. 12 months more of bottle aging before
release. Red with violet hues. The aromas remind us of
red fruits such as cherries, strawberries and plums.
Some vanilla and chocolate notes. This wine has 5
years cellar potential.
Course: Cream cheese and wild thyme custard, lentils
salad and sweet garlic cookie.
Paring: The cheese reminds us of the malolactic
fermentation and the sweet flavor accompanies the
sweet tannins of the malbec.
FOURTH STEP
Wine: RUCA MALEN Cabernet Sauvignon 2004. 100%
Cabernet Sauvignon. From the middle commercial line of
the winery. 12 months aging in oak barrels. 12 months
more of bottle aging before release. Intense ruby red
wine with nose of red fruits and coffee with spice.
Full-bodied wine of long persistence and excellent
structure with strong tannins. This wine has 5 years
cellar potential
KINIEN Cabernet Sauvignon 2003. 90 % Cabernet
Sauvignon, 10% Malbec. 15 months aging in new oak
barrels, a further 15 months of bottle aging before
release. Ruby red wine with spicy scents and a
delicate pepper touch mixed among plums, berries and
cherries. Smoke, vanilla and chocolate character.
Course: Roasted beef tenderloin served with black
pepper butter, olive oil and roasted peppers.
Pairing: The juiciness of prime Argentinean beef
couples with the Cabernet Sauvignon so harmoniously.
FIFTH STEP - DESERT
Quinoa, bread and roasted apples cake with hesperidia
and caramel sauce

Santiago to the Aconcagua Valley. The Aconcagua Valley
is Chile’s smallest wine valley but very well known
for its Cabernet Sauvignon and Syrah production.
Moving toward the mountainous eastern edge of the
Aconcagua Valley we will visit Viña San Estebanwww.vse.cl, one
of Chile’s first hillside vineyards. This land was
home to an earlier civilization that has left
enigmatic remnants of their culture in the form of
rock petroglyphs, full of symbolism and mystery. A
producer of some very impressive reds, the notable
Wine Guide from Chile selected Viña San Esteban 2003
Laguna Del Inca as one of the top 10 assemblage wines
of 2006.
For lunch, we will visit Errazuriz Winery

largest and oldest wineries in Chile and considered
one of the most beautiful. Founded in 1870 it is in
the forefront of producing upscale quality wines.
We will depart at 8am to explore the Cachapoal Valley,
located an hour and a half south of Santiago.
Our first stop will be at Chateau Los Boldos, owned by
the Massenez family, producers of outstanding Eaux de
Vie in Alsace, France. Their motto, “Wine must have
soul – without soul, it is empty“ is the philosophy
that characterizes this “all French” Chilean winery.
Afterwards we will head to the modern and innovative
Gracia winery

Finally we will visit Altair

to try their Sideral & Altair – a lunch at the local
favorite, El Encuentro, uniquely Chilean Grand Cru.
We will depart at 9:00 a.m. for the coast in the
direction of the port city of Valparaiso and the
Casablanca Valley, the shining star of Chile’s white
wines. The valley is known for its premium Chardonnay
and Sauvignon Blanc wines. Winery development began
here in the 1980s and all have a very modern feel.
Our first stop will be to Viñedos Orgánicos

you will learn what organic and biodynamic winemaking
is and taste some of the outstanding wines produced by
head enologist Alvaro Espinoza, arguably Chile’s most
famous winemaker.
Right next door is the restaurant and tasting room of
the Morande Winerywww.morande.cl. Pablo Morande is the pioneering Chilean
wine maker who first began planting vines in the
valley. A very interesting tasting is in House of
Morande restaurant for us.
Departing Casablanca we will head to the San Antonio
Valley, the closest Chilean valley to the Pacific
Ocean that provides the cool breezes which make it an
ideal climate for white varietals. Here we will visit
Viña Matetic

Chilean wine!” Stunningly modern, this new all-organic
winery has named their wine “EQ” which stands for
“Equilibrio,” the Spanish word for balance - the
harmony of soil, climate and vine. We will have a tour
and tasting at the winery. Their chic restaurant,
where we will have lunch, is set amidst lush.
The Colchagua Valley is emerging as the new king of
Chilean reds and today’s winery visits will no doubt
demonstrate the quality of new wines coming from
Colchagua, particularly of the Carmenere, Syrah and
Malbec varieties.

Montes started the winery with three other Chileans in

enjoy a great ride in a carriage discovering the
secrets hidden in their vineyard.
Departing Santiago at 9:00 a.m. we will drive south
along the foothills of the Andes and stop by some
exciting new wineries in the Maipo Valley. The valley,
the oldest and most famous of Chile’s wine valleys, is
home to many of Chile’s famous wineries such as Concha
y Toro, Cousino Macul and Santa Rita and it is also
famous for its Cabernet Sauvignons.
We will visit the small boutique winery Aquitaniawww.aquitania.clwhere two well-known agronomists and wine
makers from Bordeaux, France, Paul Pontallier (of
Chateau Margaux) and Bruno Prats (former owner of Cos
d'Estournel) are producing delicious wines and still
labeling bottles by hand.
After that, an informative and fun experience is in
store at our first stop in the small winery of Roberto
Muñoz. Aptly named Paseo del Vino (Wine Steps) he
passionately describes his artisan winemaking process
where everything is done by hand.
We will stop for lunch in the town of Pirque in the
eclectic Séptimo Cielo

Cruz is our next stop. With its ultra-modern
